Veg biryani recipe

Veg biryani is a Classic Indian vegetable rice dish which is a perfect dish for any occasion. Learn to prepare tasty Veg biryani in 30 minutes. The special variety of rice that is log grain basmati is often used for the preparation of the dish. The steamed log grain rice is mixed with assorted vegetables in a spicy masala.

The classic approach is the make layers of rice, and vegetables and then cook it slowly the process is called as “Dum”.  In many regions of Indian it is also known as The veg dum biryani.

While the biryani is magnificent in taste the vegetables also adds the nutrition’s  values in it. The perfect source of carbs and proteins however if you run on a very strict diet it is not a recommend dish. it fine to have some on your cheat days.

Traditionally the veg dum biryani is cooked in pot or clay vessels which can take up to 2-3 hours to cook but the variations has come and now the microwave versions of it is also available.

Cooking time: 26-30 minutes.

Ingredients for veg dum biryani

Basmati Rice 1 1/2 cups

Carrots 2 medium

Carrots 1/2 inch pieces 2 medium

French beans 1/2 inch pieces 15

Cauliflower 10-12 florets

Green peas shelled 1 cup

Salt to taste

Green cardamons 4-5

Black cardamom 1

Cloves 15

Cinnamon 1/2 inch stick

Bay leaf- 1

Caraway seeds (jeera) – 1/2 teaspoon

Ginger-garlic paste -1 1/2 tablespoons

Turmeric powder- 1 teaspoon

Red chili powder- 1 tablespoon

Coriander powder- 1 tablespoon

Yogurt- 1/2 cup

Rose water -1/2 teaspoon

Saffron -a few strands

Fresh tomato puree- 1 cup

Biryani masala powder- 1 teaspoon

Fresh coriander leaves chopped- 2 tablespoons

Fresh mint leaves chopped- 2 tablespoons

Take 4 cups of Basmati rice and then wash and rinse it until the water turns clear,Then soak it in 2 cups of water for 20 minutes. While the rice is soaking, chop all the veggies. Also soak the frozen green peas in warm water for 5 minutes. Once 20 minutes are up, drain the water from the rice and set it aside. Also drain the water from the green peas and set it aside.

Press the saute button on the Instant Pot. Once its sufficiently hot, add oil to the pot. To the hot oil, add bay leaf, green cardamom, whole cloves, black peppercorns and cumin seeds. Saute for 30 seconds until the spices are fragrant.

Then add the sliced onions, along with the green chili and cashews. Cook for 2-3 mins until onion turn light brown. The cashews will also turn light brown by now.
